Ingredients
Noodles
- 8 oz soba noodles, 100% buckwheat
Vegetables & Protein
- 1 cup shelled edamame, fresh or frozen, thawed
- 1 cup snow peas, trimmed
- 1 cup shredded red cabbage
- 3 scallions, sliced, whites and greens separated
Miso Sesame Sauce
- 1 tablespoon white (light) miso
- 2 tablespoons tamari (liquid aminos or soy sauce work as well)
- 1 tablespoon tahini
- 1 tablespoon rice vinegar
- 1–2 teaspoons real maple syrup, to taste
- 2–3 tablespoons warm water, for thinning
Toppings
- Toasted sesame seeds
- Optional chili flakes or chili crisp, to taste
Method
- Cook the soba noodles according to package directions. Drain and rinse briefly with cool water to prevent sticking. Set aside.
- Whisk together the miso, tamari, tahini, rice vinegar, maple syrup, and water until smooth and pourable.
- Heat a large skillet over medium heat with a splash of water or neutral oil (avocado, canola, grapeseed, use what you have). Add the scallion whites, snow peas, and edamame. Cook 2–3 minutes until just tender and bright.
- Add the shredded cabbage and cook 1 minute more, just until slightly softened but still crisp.
- Add the cooked soba noodles and pour in the sauce. Toss gently to coat everything evenly and warm through, about 1–2 minutes.
- Remove from heat and finish with scallion greens and sesame seeds. Add chili flakes or chili crisp if desired.
